Shri Krishan 56 (chapan) bhog, legend (katha) behind this.

Shri Krishna is known to be Eighth Avatar of Lord Vishnu. He took this Avatar in Dwapar Yug in Yadav clan and known to be a Yadovanshi. He is fond of Cows and so got the name Gopal, Gwalpal. He was born to Devaki and Vasudeva, who belong to Mathura (Mathura district, now in U.P). His foster parents were Yasoda and Nanda. His elder brother is Balaram (seventh son of Devaki and Vasudeva but Rohini, first wife of Vasudeva gave birth to him due to transferring of womb). His younger sister is Subhadra, born to Rohini and Vasudeva. 

Govardhan puja is done a day after the Diwali. This day is dedicated to Cows and Krishna in rememberance of this incidence. 



Legend:- Krishna lived in Mathura state. 
People there every year offered their gratitude to Indradev for his 'Kripa' in form of rain, which helped them to live their livelihood. Krishna one day asked them why they perform Yagna and offers their food items and other things to thank Indradev? It is duty of every God to contribute in the sustenance of this world. If you gave these things and eatables to any poor person, then it would be a real help for him in making his survival. He stopped them for not performing this Yagna and enlightened them. All people left this idea to continue anymore and agreed Krishna. 
 Indradev, unaware of reality of Shri Krishna and in his arrogance, decided to punish Mathura Vasi. He heavily rained on Mathura district to show his power to the people, and his anger. In his prejudice, he forgots reality of Shri Krishna of being Narayan (Lord Vishnu). Indradev lavishly rained for 7 days, and in this week time, Shri Krishna saved people of Mathura, by giving them refuge underneath Govardhan Parvat. He lifted Govardhan Parvat with his small finger. People who did not know his reality of being God himself, with intention to help him, hold Govardhan Parvat with their wooden long sticks. During these 7 days, there was a situation of flood and their was nothing to eat. To save people from starvation and to save their lives. Shri Krishna fed them with the fruits and green leaves produced on Govardhan Parvat. Govardhan Parvat nourished all people in this hard time. But Indradev forgots his duty towards welfare of people. 
 After a week time of hard rain, Indradev realized his mistake. He appeared in front of Shri Krishna and apologized to him for his misdeed. Also he apologized for not respecting Narayan's Krishna Avatar and mistaken him as ordinary human being. 
 People of Mathura, also realized Krishna's true identity and thanked him. Govardhan Parvat had saved their lives, so they started offering their Puja to Govardhan Parvat every year, in replacement to Yagna for Indradev. In their offering to Shri Krishna, people of Mathura prepared 56 types of food items and offered them to him. 
 According to hindu mythology, we have 8 pahars in each day ( 4 pahars of day, 4 pahars of night). So in a 7 day week period, there are 7*8 = 56 pahars. Each pahar is of 3 hrs, and in this way, we have 8*3 = 24 hrs day. People offered food to Krishna for each pahar of this 7 day period, during which Krishna nourished all people, but himself did not eat anything. Because it was he only who could hold Govardhan Parvat.
